I’m guessing most of the “this is raw meat” people aren’t Australian. It’s common place here to get a smoked leg of ham at Christmas. It’s not thin slices because it’s cut off the bone. The whole leg is smoked as is, and the consumer at home either bakes it further, often with the skin on. Or they cut it off and cut it as cold sliced ham. In that case, there’s a layer of white fat under the skin exactly like what OP has here.
We eat cold ham at Christmas because it’s the middle of summer.

It’s just a chunk from a [leg of ham](https://www.chickendelight.com.au/wp-content/uploads/2020/07/Ham-Ezy-Carve-cropped.jpg) with the skin peeled off. You could trim and slice it to make it more like deli served but it’s the same thing.
